Firing tea leaves is the busiest day in every household. To get here, the leaves have to undergo two other processes: First, they are picked leaves from the fields. Second, the inferior quality leaves are taken out of the batch. All members of the family participate in the activity, which resembles the celebration of an important ceremony. In the morning, women go out to pick fresh leaves. The tender leaves are fragile, so the pickers need to be very careful.

The evenly-shaped leaves, those which are picked before the Qingming Festival (around April 5th ), are very rare and expensive.

Put the fresh tea into cauldrons which are heated to about 200 degrees centigrade. The duration and degree of heating are very important. Leaves are continuously sifted to make sure that they are evenly toasted. This takes three to five minutes. If the proper procedures are not observed, leaves will be scorched.
Sift, stir and press the leaves. Don’t their hands get burned? What superb skill! This process takes twelve to fifteen minutes .

Roll the leaves between the palms. The worm-like leaves with fine short white hair on its surface comes into shape. This takes thirteen to fifteen minutes.

The last step is to dry the leaves thoroughly in slow-burning fire. This takes six to eight minutes.
